This is an extremely easy recipe that comes out really tasty and rather impressive, too.
Meringued Pecans
1 Lb. of plain Pecans
2 egg whites
1 cup light brown sugar
1/2 t. vanilla
1/4 Lb. butter/margarine
Melt butter on a jellyroll pan at 250ºF. Beat egg whites stiff, add the sugar and vanilla and fold together. Add pecans and fold into egg white mixture. Spread on the jellyroll pan on top of the butter. Bake for 1 hour at 250ºF, turn pecans over with a spatula and bake for another half hour. Cool on wax paper. Break apart and serve.
(a jellyroll pan is a cookie sheet with low sides.)
